A traditional Bengali recipe which is cooked during festivals and special occasions like rice eating ceremony, baby shower, potluck and many more. This traditional Bengali recipe is very popular in Bengali household. Even in our house, my mother cooks this often.

HOW TO COOK BENGALI STYLE SHUKTO (STEP BY STEP WITH PHOTOS)

Take veggies – 2-3 drumsticks, 2 sweet potato, 1 potato, 3 Green banana,5-6 bitter gourd. Wash them and cut them.

Next pour mustard oil in pan. Start frying with bitter gourd slices.

Set them aside after frying. Now fry potatoes and green banana in the same oil.

Add chopped drumsticks and potato cubes subsequently. Sprinkle 1 Tsp Cumin powder and salt. Toss everything.

As veggies get fried,add water.

Add the fried bitter gourd slices and cover with a lid for few minutes.

Transfer to a bowl and set aside. Now roast bori( Bengali style dry fritters) in the same pan with ghee. Pour milk in the pan as Boris get fried.

Now add the Shukto in the pan. Cook for few minutes in low flame.

Transfer to a plate and serve.

INGREDIENTS ( SERVINGS -4)
3 Green banana
1 Potato
3 Sweet potato
6 Bitter gourd
3-4 Drumsticks
1 Cup Milk
8-10 Bori(Bengali style Dry fritters)
1 Tsp Cumin powder
Mustard oil to Cook
Wash veggies and cut them into cubes and slices.
Put mustard oil in pan. First fry the Bitter gourd slices and set aside.
Next fry potatoes ( both the potatoes) and green banana. Subsequently add the drumsticks. Fry them. Sprinkle 1 Tsp Cumin powder and salt. Toss everything.
Add water and set Shukto aside.
Now roast the Bori in pan with ghee.
Pour 1 cup Milk and let it boil.
Add the Shukto.
Cook for few minutes in low flame.
Transfer to a plate and serve.
( Use of chilli is optional)
