ILISH MACHER MATHA DIYE KOCHU SHAAK | HILSHA FISH HEAD COOKED WITH TARO STEM

INGREDIENTS

  • 2 Hilsha fish head
  • 200 Gm Kochu Shaak / Taro Root
  • 2 Tsp Turmeric powder
  • 1 tsp Gur
  • 1 Tsp Cumin Seeds/ Jeera
  • Salt to taste
  • Mustard Oil

PROCEDURE

  1. Chop the Kochur Shaak into fine pieces. Scrap it’s skin. Wash it throughly under running water.
  2. Put it in pan. Add salt and 1 tsp Turmeric powder.
  3. Let it cook in medium flame for few minutes.
  4. Cover with a lid and toss in between.
  5. Now set it aside as the shaak softens.
  6. Now pour mustard oil in pan.
  7. Temper the oil with 1 tsp Cumin seeds/ Jeera.
  8. Add the Kochur Shaak.
  9. Toss them.
  10. Set it aside after this step.
  11. Now fry fish head pieces in the same oil.
  12. Break them into shreds.
  13. As fish heads softens,add the shaaak.
  14. Add salt to taste and gur.
  15. Start mixing.
  16. Cook till fish heads scrambles well and mixes with the shaak.
  17. Spread dollops of mustard oil and finish cooking.

ILISH BEGUNER JHOL RECIPE | BENGALI STYLE HILSA FISH CURRY WITH EGGPLANTS | BENGALI STYLE FISH RECIPE

  • 10 pieces Ilish Maach/ Hilsa Fish
  • 1 Eggplant
  • 1 Tsp Nigella Seeds
  • 1 Tsp Turmeric Powder
  • Salt to taste
  • Mustard Oil to Cook
  • Green Chilli

HOW TO COOK BENGALI STYLE ILISH BEGUNER JHOL

  1. Coat the fish pieces with 1 tsp turmeric powder and 1 Tsp Salt.
  2. Put mustard oil in pan. Fry fish pieces. In one batch fry 4-5 fish pieces. In this way, fry all the fish pieces.

2. Set the fish pieces aside after frying.

3)Temper the same oil with 1 tsp Nigella Seeds. Cut the eggplant into cubes and put them in the oil.

4) Add 1 Tsp Salt and 1 Tsp Turmeric Powder. Toss everything and cook for few minutes.

5) Add water and green chilli.

6) As water starts boiling,add the fried fish pieces.

Let it cook for few minutes. As fish pieces get soaked in the curry,it’s ready to serve.

It tastes fabulous with Hot rice.

Maacher Matha’r Ghonto Recipe | How to Cook Bengali style fish head curry | Fish Head Curry Recipe

MAACHER MATHA’R GHONTO RECIPE

This popular fish head curry recipe has mixed origin. In Bengali households, fish heads are mostly cooked with various Indian spices alongwith a cup of rice. Yes, a cup of rice is the key ingredient that makes the preparation Muri Ghonto. It’s very tasty. The spices like garam masala powder composed of cinnamon, clove, nutmeg gives an inviting aroma in the curry that makes it irresistible. Today’s recipe is different from that. Amid lockdown, it’s becoming difficult to gather all the essential Spices everytime. Every now and then, we are running out of spices,as my mother doesn’t store much spice at a time. The flavour fades if you store masala for a long time. Hence she challenged me to prepare this fish heads in minimal spices but make it tasty. So cooked this Authentic Bengali Maacher Matha’r Ghonto without the signature rice and garam masala powder. Believe it you are gonna lick your fingers.

INGREDIENTS

  • 200 gm Fish Heads
  • 1 Tsp Cumin seeds
  • 1 potato (sliced) optional
  • 1 Tomato (large)
  • 1 Onion (large)
  • 4-6 Garlic Cloves
  • 2 Tsp Turmeric powder
  • Salt to taste
  • Mustard Oil to Cook

HOW TO COOK BENGALI STYLE MAACHER MATHA’R GHONTO (STEP BY STEP WITH PHOTOS)

Take fish heads in a plate. Sprinkle 1 tsp turmeric powder and salt. Marinate for few minutes.

Put mustard oil in pan. Wait till smoke comes out. Fry the fish head pieces.

Set them aside after frying.

Now Temper the same oil with 1 tsp Cumin seeds. As the seeds starts splattering, add the potato slices. (Addition of potato slices in the curry is optional)

Make a paste of tomato,onion and garlic cloves. Put it in pan.

Add salt to taste and 1 tsp turmeric powder.

Saute them till the raw smell of the masala goes away.

Add water. Add the fried fish heads.

Cook for few minutes more.

Transfer to a bowl and serve with rice.

POMFRET MAACHER JHAL (BENGALI STYLE POMFRET FISH CURRY) | POMFRET CURRY RECIPE| FISH RECIPE

Wash pomfret fish pieces. Add 1 tsp turmeric powder and salt. Coat fish pieces.

Put mustard oil in pan. Fry the fish pieces and set aside after frying.

Temper the same oil with 1 tsp Nigella Seeds.

Cut the tomato into cubes. Put them in pan.

Add 1 tsp Turmeric Powder and salt to taste. Cook till tomatoes become mushy.

Once tomatoes become mushy add water.

Add fried fish pieces. Cook for few minutes, then transfer to a bowl and serve.

Tasty healthy Fish Curry is ready.

HOW TO COOK BENGALI STYLE MAACHER DIMER BORA

INGREDIENTS

  • 200 gm Fish Roe
  • 4 Tsp Gram Flour
  • 1 medium size Onion
  • 1 Tsp Turmeric Powder
  • 1 Tsp Black Pepper Powder
  • Salt to taste
  • Mustard oil

Wash the fish roe carefully. Because of the grainy texture, it’s better to wash them alternatively with hot water and cold water. Remove the veins.

Take the fish roe on a plate. Add 1 tsp Turmeric powder, 1 tsp Black Pepper Powder. Add 4 Tsp Gram flour and salt to taste.

Whiskey everything.

Put mustard oil in pan.

Add spoonful of the fish roe mixture in pan. Fry them till the fritters become golden brown in colour.

Serve hot.

HOW TO COOK BENGALI STYLE FISH KALIA (STEP BY STEP WITH PHOTOS)

After washing fish pieces, add 1 tsp Turmeric powder and squeeze 1/2 lemon on the fish pieces.

Now put mustard oil in pan. Fry the fish pieces in the oil.

Cut 1 Potato and 1 onion into thin slices. Put them in the same oil for frying.

Cut 1 tomato, 1 onion, 4-6 garlic cloves and ginger slice into slices. Put in a grinder and make paste. Put the paste in pan.

Add 1 tsp Turmeric Powder and salt to taste.

Cook till the raw smell of the masala goes away. Add the fried fish pieces.

Add water as much needed. Add 1 Tsp Garam Masala Powder and finish cooking.

FISH EGG BHURJI | HOW TO COOK BENGALI STYLE SCRAMBLED FISH EGG RECIPE

Fish are must in Bengali thali. From simple fry to spicy curry, a fish recipe makes one hearty meal. Fish recipes have their own prominence in Bengali cuisine followed by other sea food like prawns or crabs. But this fish Roe recipe is very underrated. We mostly fry them and pair them with Dal rice combo. Fish eggs are very delicious in taste. You can cook them simply as fritters, it will taste awesome. If the fritters are cooked in tomato onion gravy, a delicious curry recipe gets ready. No matter how you cook, it tastes wonderful. But it’s cleaning process is bit clumsy. Since it’s texture is grainy, you have to be careful with the cleaning.

In our house, my mother wash them with hot water. Dip the lump in hot water, drain out the water, remove the veins and membranes. Repeat this process till the lump becomes clean. Then it’s ready for cooking.

HOW TO COOK BENGALI STYLE SCRAMBLED FISH EGG RECIPE (STEP BY STEP WITH PHOTOS)

Put mustard oil in pan. Fry 1 Cup Potato cubes in the oil.

Chop one medium size onion into slices and put them in pan. Fry everything till the onions become golden.

Add the lump of fish roe.

Add 1/2 tsp turmeric powder and salt to taste. Mix the fish roe with the potatoes.

Now add 1 tsp Garam Masala powder and cook in low flame for few minutes.

Transfer to a plate and serve hot.

Add 1 Tsp Garam Masala powder. Cook in low flame for few minutes.
Transfer to a plate and serve hot.

RUI BHAPA -How to cook Rui Bhapa

Another yummy fish recipe.

Bengalis cherish fish in their menu. Be it our lunch or dinner we enjoy fish on our plate every time. This fish preparation is very easy to cook. It requires only 10 minutes to preapare this.

INGREDIENTS

Rui or Katla fish piece -2 Mustard powder – 4-6 spoon( Sunrise mustard powder) Mustard oil Salt to taste.

COOKING STEPS

Take a bowl. Put mustard powder in the bowl.

Add water as much needed to make a paste. The consistent of the paste shouldn’t be too thick and neither too runny.

Now add the fish pieces. Mix them well in the mustard paste. Add dollop of mustard oil.

Now put it in the oven and cook for 5 minutes.

Ready!!!!

Enjoy with a bowl of rice.

PHULKOPI DIYE TYANGRAR JHOL

I am not at all a fish fan. Since my school days it’s my mother’s struggle to feed me fish. Though I love everything cooked by my mother but I always create excuse to avoid fish.

I started cooking as I finished my college. In fact cooking was never my hobby. My fee time means either I am glued to some tv series or I am gulping some story.

My mom faced an accident. And due to some major operation she was bed ridden for months. That accident changed many things. One of them is my knack for cooking. I took up knife for the first time that day. I don’t know what God has stored for me next , till then let’s keep moving …. what say

So today’s recipe is

PHULKOPI DIYE TYANGRAR JHOL

It’s a very healthy and tasty recipe as well as it’s quick to cook.

INGREDIENTS.

Tyangra maach or Catfish -4 pieces. Phulkopi or cauliflower -1 cup. Coriander powder -1 TSP. Salt to taste. Turmeric powder pinch. Mustard oil to cook

COOKING STEPS

Wash fish pieces. Add salt and turmeric powder.

Boil oil in pan till smoke starts coming out.

Then put the fish pieces. Fry them in high flame.

Then set aside the fried fish pieces.

Add the chopped cauliflower in the same oil. Add salt and turmeric powder. Toss them.

Add coriander powder, salt and turmeric powder. Cook for a while.

Add water as much needed.

Add the fried fish pieces.

Cook for few more minutes.

Transfer to a plate.

It goes best with hot rice.

BENGALI FISH CURRY | Easy Fish Recipe | How to cook fish in Bengali style

Hello people!! Another fish recipe is on its way. As a bong Fish is very common in our lunch thali or even in dinner scene. Fish is a must in our auspicious occasion. Be it first rice eating ceremony or baby shower program, fish preparation is must. In my blog I have posted several fish recipes.

Here’s today’s recipe. Ingredients. Fish -4. Onion -1. Tomato -1. Garlic cloves -4. Salt and sugar to taste. Coriander powder -1/2 tsp. Turmeric powder pinch

COOKING STEPS. Sprinkle salt and turmeric powder on fish pieces. Boil mustard oil in pan till it starts giving smoke. Put the fish pieces and fry them. Make a paste of tomato, onion and garlic cloves. As fish pieces get fried, set them aside. Put the paste in the same oil. Add salt, turmeric powder and sugar, coriander powder in the pan. Cook till it becomes golden and the raw smell goes away. Add water as much needed. Put the fried fish pieces. Cook for a while in low flame. Transfer to a bowl and serve with rice.

Tomato tyangrar rosha

Tyangra maach , you know what friends I am having this fish since my school days. And believe me it tastes yumm😋. So when I cooked it today I planned to share my recipe with you also. Don’t forget to mention in the comment section how much do you like it.

Ingredients : Ingredients are very simple and mostly available in your kitchen all time. So here’s the list ➡️ Tyangra maach ➡️ Tomato – 2 medium size ➡️ Ginger-garlic paste ➡️Oil ➡️ Salt and sugar tastewise

Cooking steps ➡️Boil oil in kadai and fry fish pieces carefully as oil splatters very much. As it fries set it aside. ➡️Now blend tomato and add it in the same oil. Saute it well. Then add ginger-garlic paste and sugar and salt. Cover with a lid and cook in low flame for a while. ➡️As the raw smell of the masala goes away add water as much needed. Add fried fish pieces. Let it cook for a while. Add green chillies and hot hot tyangrar rosha is ready to serve.

Kalojire diye Ilish Maacher jhol

Rainy season means ilish , ilish and only ilish. Any bong can relate to this. After posting recipe of bhapa and sorshe Ilish, today I am sharing the easiest recipe of ilish maach.

Well key ingredients to make it are 🔷 Hilsha fish pieces 🔷 Nigella seeds- pinch 🔷 Turmeric powder-1/2 tsp 🔷 Green Chilli 🔷 Salt – tastewise

Now boil oil in kadai and fry fish pieces. Then set them aside and tamper the same oil with nigella seeds. Then add green chillies. Add water as much needed. As water starts boiling add turmeric powder and salt in the water. Add fried fish pieces in the jhol. Cook in low flame for a while.

Serve it hot with rice .

Ilish Beguner Jhal

Hi guys 👋 have you ever tried ilisher jhol without frying ilish pieces. Well this recipe which I am sharing today was my Dida’s speciality which I have learned from her daughter 😉 alias my mom. It’s the easiest recipe ever also tough to cook. It’s the recipe cooked with minimal ingredients. Key ingredients to make this dish ♂️ Eggplant pieces ♂️ Ilish maach pieces. Let’s start the cooking. Boil oil in Kadai and fry eggplant pieces in the oil.

Toss them well and add pinch of salt and turmeric powder in it. Add water after a while.

Add fish pieces and cook in low flame for a while. As the fish gets cooked serve it hot with rice .

Sorshe Ilish| Cook Hilsha in Mustard Paste

Bengalis love Ilish maach more than anything. Today’s recipe is a simple Ilish maach recipe where Ilish maach is cooked in mustard paste.

We bongs love Hilsha like crazy – be it ilish maach bhaja , ilish bhapa or simply ilisher jhol we lick up our plates like 😋😋😋😋

Here I am posting today my second Ilish post. Last time I cooked Ilish bhapa which is much loved Ilish preparation. Now today I am posting another Ilish preparation which is my Mom’s speciality. I tried my best to imitate her. Well I couldn’t match up with her but my version won heart of my Mom . So today I am sharing the recipe here.

Ingredients ▶️ Hilsha pieces ▶️ Turmeric powder▶️ Black cumin seeds▶️ Mustard paste- 4 spoons ▶️ Salt – tastewise ▶️ Mustard oil- As required ▶️ Green Chilli

First step involves washing the fish pieces and sprinkle turmeric powder and salt on it as shown above. Now boil oil in pan and fry them and set them aside.

Now tamper the oil with Cumin seeds. This is also known as Nigella.Now add mustard paste in it and saute it. Mustard paste preparation is the most important thing here. Now a days ready made mustard powder are available in the market. Buy one such packet and then mix it in lukewarm water and let it rest for 10-15 minutes. Add this mixture in the oil. Add green chillies and fried fish pieces in the gravy. Drizzle mustard oil on it and finish the cooking.

This goes best with rice .

Mourola Maach Bhaja (Mola Carplet fry) | Cook simple Maach Bhaja

We Bengalis love fish more than anything else. There are various delicious preparations of fish. This is my #third post on fish. Previously I have posted fish curry and maacher jhol here. Today I am posting the simplest preparation.

Key ingredient here is Mourola maach, oil and salt and turmeric powder.

Wash fish pieces and sprinkle salt, turmeric powder on it. In the meantime boil oil in pan. Now put the fish in the oil and fry them till it becomes golden brown.

This crispy and crunchy fish , you can have it with rice and dal combo.
